Thai Salad

There's something about the first 60 degree day of spring. Today just felt GOOD. My kids played outside for hours, as I type this they are neatly tucked in their beds, exhausted and happy after a day in the sun.

When the weather starts to warm up, I instinctively reach for my salad recipes. I love a good Thai/Asian chicken salad recipe, and this one beats the socks off any other Thai salad recipe I've tried. I've posted this photo before, but without the recipe, so when my sweet Mom posted the recipe on her just launched food blog, I had to link her.
