The harvest...


Despite having the coldest July on record here, I've managed to grow quite the crop of zucchini and cucumbers. We've been snacking on cucumbers for days, with no end in sight. I grew a Japanese cucumber variety this year, I really love it! It's much spikier than most, but so, so delicious. If you see it locally next spring, pick up a plant, you won't be disappointed! Oh, and to curb my zucchini back pile, I'm making this for dinner. I'll let you know how it turns out!

** UPDATE... The Stuffed zucchini recipe is delicious. Go, make it now! You'll love it, I promise.

I miss my garden... maybe next year. Your harvest looks yummy.

If you have freezer space, I measure and freeze shredded zucchini. to make bread later.... It "melts" when it thaw's but if it's measured you just put it in and it works.
