Last week I made a big bowl of my mom's
delicious homemade salsa.... then realized I was clean out of tortilla chips. I had a choice, take 3 kids to the store at 4 in the afternoon, or try my hand at making my own chips. This choice was a no brainer for me. Taking all 3 kids to the store is not far behind visiting the dentist (ugh, and I hate the dentist!). I knew I wanted the chips to be healthy, (does anyone else hate that deep fried oily smell?). I was surprised to come across such rave reviews of baked tortilla chips on the internet. This became a project for a couple of bored kids, it turned out to be so fun, and the chips were surprisingly delicious. Oh, and don't forget cheap! I can get a pack of corn tortillas at the super mercado near my house for .15 cents (seriously!) I would highly recommend making your own tortilla chips, here's how we did it....
First, preheat your oven to 350 degrees, while the oven is heating, cut a stack of plain old corn tortillas into wedges. Look! Maya did this for me... (we used white corn tortillas)

Then spray a cookie sheet with olive oil spray. Lay the corn tortillas on the cookie sheet (not touching) Spray the tops of the tortillas with the spray too... Sprinkle with kosher salt. If you don't have olive oil spray, you can brush the tortilla chips with oil on both sides before stacking and cutting, then arrange on the tray and bake.

Slide them into the hot oven and let bake for about 13-15 minutes. Check them after a while to make sure they're not burning or anything... No need to flip them over. They cook on both sides evenly. Make sure you cook them long enough or they will be chewy instead of crunchy.

We like nachos at our house, so I removed them from the oven a few minutes early and sprinkled some cheese on them. Back in the oven for a few minutes....

I asked her to hold a chip up for me and give me a smile, but she was so hungry all I got was this look..... and a "Moooooom! I'm so hungry!!"
A success if you ask me!

What a great idea! My roomates and I used to do this for midnight snacks because oil/spray and corn tortillas are cheap! Yours look perfect, as usual.
