Now what??

I've been dutifully tending to my 4 red pepper plants for the past 3 months, pruning, watering, fretting and waiting. I happen to love red peppers, and when I found a few plants on clearance at the nursery in early July, I decided I would give them a chance. I think I spent a few dollars per plant, and when compared to the few dollars I pay PER pepper, I thought it would be a worthy investment. Note for next year- buy the plants in May when you're supposed to and maybe you'll actually get one to turn red... I let the plants hang on for as long as I could, but it looks like we might actually get a hard freeze here, so out to the garden I trudged, all hope for a red pepper dashed. Gah, I don't even LIKE green peppers, the only purpose they serve is to eventually turn red, know what I'm sayin? Anyone have any suggestions for green pepper recipes? Anyone?

do you have the baked green pepper recipe? It's the only thing I use whole peppers for. I have gotten so burned out on raw carrots and celery, so I love raw green peppers for a snack.

I hear ya there sis, I am definitely not a fan of green peppers. You could just chop them up, freeze them, and use them in small amounts when a recipe calls for it.

I LOVE that picture of henry by the way!

I love green peppers in fajitas, and chopped up small in spaghetti sauce. I'm with Jill. I would freeze them.

Ha! I hear ya! I do happen to like Green Peppers, but it pales in comparison to the red. So juicy, so tasty, so refreshing and satisfying! To be prepared for red and get green, well I would compare that to preparing yourself for Cafe Rio and having to settle with Taco Time! UGH! SAD!

Oh and Henry is AMAZING! SO cute! He cute little face ALWAYS makes me smile!

I say stuff those bad boys! Get some crab (or Krab, whatev), cream cheese, some spices of your choosing, pile it on in there, and voila! Dinnair is sairved.

I have a yummy pasta receipe that uses green peppers. I would probably chop them up in the measurements I need or that receipe and freeze them...

I share your love of red peppers... We had some amazing ones this year! I can enjoy a few raw green pepper slices, but jeepers, you have a truck load there. Way to go, they are beautiful!!!

I have chopped them like Jill suggests and used them all year. It works great....
I like to put the chopped peppers and a little onion in my hamburgers... and my sweet and sour sauce.
